Mirin is a thick, sweet Japanese cooking wine. Steamed mochigome rice, komekoji (rice yeast), and shochu (Japanese liquor) are mixed and and fermented to make it. It is packaged in bottles, usually dark green. Find it in the ethnic foods or vinegar section of your supermarket or a health foods store. It is especially nice in this dish because its subtle sweetness forms the perfect counterpoint to burdock’s earthy taste. If you like it, try sprinkling it on fish,too.
